Ingredients:
2 eggs
3/4 cup milk
3/4 cup Italian breadcrumbs
2 pounds 80/20 ground beef
1/3 cup onion diced and sautéed
1 tablespoon chili sauce
1 teaspoon Italian seasoning
2 tablespoons fresh parsley chopped
1 tbsp minced garlic
1/4 tsp b. pepper
1/2 tsp salt
Meatloaf Sauce
1/2 cup Hines chili sauce
1/2 cup ketchup
2 tablespoons brown sugar
Method:
1. In a medium bowl combine eggs, milk, and breadcrumbs. Allow mixture to sit for 5-10 minutes.
2. Add the ground beef, onions, 1 tablespoon of chili sauce, Italian seasoning and parsley. Mix until just combined.
3. Form a 8"x4" loaf and smoke at 350-375 for 1 1/2 hours or until IT of 150. Spread the chili sauce mixture on the meatloaf and smoke for an additional 10-15 minutes or until IT is 160.
