Method:
1. Pat dry tri-tip with paper towel then season with salt only
2. Let sit in refrigerator uncovered on bakers rack to dry brine for 12-24 hours
3. Remove tri tip from refrigerator and rest on counter until its room temperarture
4. Heat smoker to 275 degrees and cook tri tip until internal temperature of 115 degrees
5. Remove from smoker and crank heat to full
6. Sear both sides of the tri tip until internal temp hits 130 then pull and let rest for 10 minutes uncovered
7. Slice against the grain and serve.
