Method:
1. Dry Brine steaks in refrigerator for 12- 24 hours
2. Season with favorite seasoning
3. Smoke at 200 degrees for 1 hour then remove and crank heat to 500 degrees
4. Once grill hits 500 sear steaks for 2 minutes per side (depending on thickness) for Internal temp of 130-135
