Ingredients:
- Flank Steak
- Spreadable cream cheese
- 1 pack sliced mushrooms
- 1 jar roasted red peppers
- Olive oil
Method:
Cover flank steak with clear wrap and pound flat with meat mallet
Coat one surface of the flank steak with spreadable cream cheese
1. Saute 1 package sliced mushrooms in olive oil on medium heat and add salt & pepper to taste
2. Once mushrooms are cooked add one container of spinach to the pan and sauté
3. Drain 1 jar roasted red peppers and add to the mushroom mixture
4. Spread mixture over flank steak then roll flank steak into rolls, pin together with 2 toothpicks or bamboo skewers
5. Season rolls with greek season
6. Sear on high in cast iron skillet
7. Place in smoker or oven at 350 degrees until internal temperature of 140 degrees
